Gochujang
red chile paste
Gochujang is traditional Korean fermented red chili pepper paste. It is made from a cultured soybean base called Meju, combined with sun-dried red chili powder, rice powder, and salt.
Traditionally, it has been fermented in a large pot for years. During this fermentation, Gochujang gets spicy but sweet and pungent flavor. Due to this unique taste, Gochujang is very widely used in Korean cuisine from daily soup to sauce of Korean fried chicken.
